Tarte with almond cream and apples

I love tartes! their crusty dough, the sweetness of the almond cream and the acidity of the fruits. Served with a simple crème fraîche..hmmm….

Here, I want to share a basic recipe which is easy to make and which you can adjust according to the season and your fruits taste. For instance, I make the tarte also with frozen blueberries, pears, apricot etc..
This recipe serves 8, a 26cm diameter tarte ring.

Pâte sucrée
125gr flour
75gr butter
50gr powder sugar
10gr almond powder
Pinch of salt
25gr eggs

Mix all the ingredients except the eggs, until they form a crumble kind of texture. Then add the eggs. Allow to mix and place the dough in cling film. Let it rest in the fridge for at least an hour.

On baking paper, place the dough in the tarte ring (26cm), place some baking paper on top and put beans or rice over it. Blind bake on 180c° for 15, the borders should be golden. Take away the beans or rice and bake further for 5-8 minutes, according to your oven. It should be light golden color.

Make the cream
125gr soft butter
125gr brown sugar (or white sugar or icing sugar)
Mix until creamy
Then add
125gr eggs
Then
125gr almond powder
Half a tsp of vanilla and I use golden rum, just a splash, for the extra taste.

Pour onto the cooled dough
2 large apples sliced
Bake 175c° for 20′ then on 150c° 10’ until golden
